The Only Pancake Recipe You'll Ever Need

I stumbled across this simple pancake recipe a few years ago and it has been my holy grail ever since. There are no crazy ingredients, foolproof and a guaranteed crowd pleaser. I've whipped this up countless times over the years and it's a firm favourite among family and friends. Perfect for hungover Saturdays, lazy Sunday morning brunches and of course Pancake day. This recipe is enough for 2 hungry people and serves up 4-6 pancakes depending on how thick you like them. 

you'll need:

110 grams of all-purpose flour (you can use gluten-free or spelt for a healthier alternative)
2 tablespoon of flax seeds soaked in water 
200 ml Dairy free Milk 
75 ml water
pinch of salt 
vegan butter for frying 

Sieve the flour and salt into a large bowl and add your flaxseed mix. Whisk until combined and slowly add your milk and water. At first, your batter will appear thick and sticky but the milk will make it silky smooth. Throw a knob of butter into a hot frying pan and fry away! Flip every 1-2 minutes depending on how thick they are. I prefer crepes this takes a little longer as you have to cook them individually but by far the best way to have them in my opinion!

Get as creative as you like with your toppings, maple syrup is a classic, vegan Nutella and Oreos are a match made in heaven, but I'm a lemon and sugar kind of girl.
